 Chicken and Pineapple Cluster Crunch

My grandchildren love to help in the kitchen. This recipe uses basic skills like grating and mixing . They just love making the clusters join up on the top

Preheat oven to 180c/gas 4

Gently cook the carrots, onion and celery in a pan with the complete tin of pineapples and the orange juice for 2 to 3 mins.

Allow to completely cool, then add to the diced cooked chicken and mix gently together evenly. There should still be a little liquid in the mix

Transfer to a 12" x10" ovenproof dish and set aside

In a bowl,rub the marg into the flour and then stir in the oats. This should be a rough consistency

Scatter small clusters of this mix completely over the top of the chicken and pineapple mixture. (It should resemble cluster type breakfast cereal)

Sprinkle the top lightly with grated cheese

Bake in a preheated oven for approximately 45 mins or until crisp and golden on a halfway shelf.

Delicious served with brocolli and cauliflower.
