Put the minced chicken in a bowl. Add in ½ tablespoon soy sauce and ½ tablespoon fish sauce, chopped chilli, pepper and chopped coriander leaves. Mix well. Leave to marinate for 10 minutes.
Heat oil in a wok or a large frying pan. Add in cashew nuts and fry till golden brown. Drain and set aside.
Sweat the garlic in the pan. Add in chicken and fry for 3-4 minutes until it is cooked. Add in spring onions, basil and pineapple. Stir for 2 minutes.
Add in the rice. Stir in the rest of the soy sauce and fish sauce. Stir for 2 minutes. Add in the cashew nuts. Mix well. Season to taste.
Serve chicken and pineapple fried rice in a pineapple shell cut into half. Garnish with chillies, coriander and chopped fried beaten egg with chives.
For the garnish: beat the egg with chopped chives, soy sauce, fish sauce and pepper. Heat some oil in a frying pan and fry the egg till golden brown like a thin omelette. Slice the omelette into thin strips. Use as garnish.
Serve the pineapple fried rice in a hollow out pineapple shell can make the dish very attractive.
