Cook onion for 3 - 4 minutes. Add salt and pepper. Stir through celery, pepper and garlic and cook for 5 - 8 minutes until very soft. Add sausages and cook until no longer pink.
Mix flour and Cajun seasoning on plate and toss chunks of chicken in the spicy flour. Add to other ingredients and continue cooking for a further 5 - 8 minutes. Add a little stock and bring to boil. Pour everything into slow cooker, pour over remaining stock, season and cover. Cook for low for 6 - 8 hours and high for 3 - 4 hours. Serve with rice.
