This recipe is something I came up with because my family and I love Italian food and Tesco provide such a wonderful Italian Finest range that I thought I could merge the two, so I did with fantastic results.
In a bowl, combine the chicken,pesto,breadcrumbs,cheese and paprika. Season lightly.
Scrunch up mixture with your hands and roll into 12-15 balls.
Heat oil in a frying pan and over a medium heat fry the balls gently for about 15 mins till golden brown.
Meanwhile cook your pasta for about 10 minutes
When pasta is halfway cooked, heat some more oil in a pan and lightly fry off the pepper,only fry for 2-3 minutes, we want the pepper to retain some bite.
Add the meatballs to your pan and also add the Cherry Tomato Sauce, fry for 3-4 minutes till hot all the way through.
Plate up your cooked pasta and pour over the meatball sauce. Grate some extra cheese shavings over the finished dish.
Sit back with a large alcoholic beverage and eat your dinner while everyone else washes up, Hurrah!
When making the meatballs, add more breadcrumbs if mixture is too wet. If they are too wet then they collapse in the pan. Alternatively if mixture is too dry then add less breadcrumbs.
