In a small bowl, mix together the oil, honey and soy sauce to make the marinade.
Cut the vegetables into equal sized pieces and the chicken into equal sized cubes. Thread chicken and vegetable pieces onto skewers, alternating chicken and vegetables.
Coat each skewer in the marinade then cook on the barbeque or under the grill for 10-15 minutes, turning frequently to ensure even cooking.
Check that the chicken is cooked through then serve and enjoy!
