Brown chicken breasts whole in olive oil, put to one side
Fry chopped onion in same pan.
Add mushrooms, stock and mustard, mix and simmer for couple of minutes before addiing chicken back in.
Simmer for 20-25mins. Chop avocado, mix with the yoghurt and once the chicken is cooked add to the dish.
Simmer for a couple of minutes and serve with rice
