chicken breast lemon thyme Knorr TESCO

This simple and delicious grilled chicken dish is a bold mixture of lemon and thyme. These two flavours are a match made in heaven and will give your standard grilled chicken a fresh flavour boost.

Blend the stock cube and olive oil to a paste. Add chopped thyme and the juice of half a lemon, then spread the paste evenly over the chicken fillets.

Place the breasts on the barbecue and cook for approx. 7–9 minutes depending on the heat. Blend mayonnaise with the beans, peas and cooked rice.

Add some thyme sprigs. Turn and cook for a further 7–9 minutes until cooked through until no pink is showing.

Serve the chicken with a squeeze of lemon juice along with a drizzle of olive oil.

Arrange the bean salad onto plates garnish with spring onions and chives, and then place the chicken on top.

  • fresh thyme, as much as you like, some chopped, some as sprigs
  • 4 chicken fillets
  • For the bean salad

  • 4tbsp mayonnaise
  • 200g (7oz) broad beans, blanched and shelled
  • 200g (7oz) peas, blanched and cooled
  • 225g (7 1/2oz) basmati rice, cooked
  • 1/2 bunch salad onions, finely chopped
  • fresh chives, snipped
  • 4 chicken fillets
