Using a potato peeler, remove the skin from the ginger
Discard the skin and carefully grate 1tbsp from the root
Put in a bowl and crush with the garlic
Add the ketchup, oyster sauce, soy sauce, 3 tbsp of water and stir
Cut the pepper into quarters and remove the seeds and stalk the slice diagonally into strips
Cut the ends from the spring onions and cut them lengthways
Cut the chicken into bitesize pieces
Boil a large pan of water on the hob
When the water is boiling, drop in the noodles, turn off the heat and boil for 4 minutes
When the time is up, drain in a colander in the sink
Heat the wok and add the oil and chicken. Use a wooden spoon to heat the chicken until its half white half pink
Add the pepper and stir fry for at least 1 minute
Pour the sauce into the wok and stir well until bubbling
Add the noodles, spring onions and beansprouts a bit at a time then toss the sauce until it is well coated, stirring constantly until the beansprouts wilt
Serve in bowls and enjoy !
