Traditionally served with coleslaw or a potato salad, this impressive chicken club sandwich is a winner for those extra-hungry lunch days! This recipe is a time-saving leftovers idea from our maple and sesame roast chicken dish. If you'd like to make it from scratch you'll need 150g (5oz) of chicken.

Heat a splash of oil in a frying pan over a medium heat. Add the bacon and cook until it begins to crisp. Remove and drain on kitchen paper. Meanwhile, toast the bread slices under the grill. 

Assemble your sandwich, starting with a slice of toast spread with a little mayo. Top with a rasher of bacon, a slice of chicken and some sliced tomato. Add a second piece of toast (spread with mayo).

Layer this with the second rasher of bacon and a slice of chicken, followed by avocado and some lettuce leaves. Finish with a slice of toast and secure your tower by skewering with a cocktail stick.
