my grandad always cooked the best currys and i got this recipe from him!
1) heat oil in large frying pan add onion and chopped chicken breast until cooked through,add mushrooms, stir occasionally (if cooking with rice prepare now)
2)melt butter in same pan, stir in flour and curry powder into a paste and add water and oxo cubes, stir well
high heat until bubbling, turn heat down add mango chutney, lemon juice and curry paste stir in then leave 10 - 15minutes to simmer stir occasionally
if you like you can add more veg a the start like peas, sultarnus, apple or sliced carrots. you can also do step 2 in a different pan and mix together at the end, goes realy nice with rice and prawn crackers, also you can use any meat if i cook a roast dinner i will use leftover meat the following night in a curry beef and chicken work well. you can also do meat-free just dont add meat
