Seal the diced chicken breasts in a saucepan over a medium heat using a little olive oil. Add all of the ingredients apart from the tomatoes which should be added towards the end of the cooking time.
Stir until it bubbles then reduce heat and cover. Simmer for 25 minutes. After 25 minutes check the potatoes are cooked and add the tomatoes, once ready, serve with basmati rice and beetroot salad
Tip: You can make this with Quorn mince, just don’t add as much water (and use vegetable stock cube).
