Mix the flour, salt, pepper, garlic salt, onion granules & paprika together in a bowl. In another bowl, mix the beaten eggs & a splash of milk.

Lightly toast buns, set to one side.

Flatten 2 chicken breasts by placing between 2 layers of cling film and bash with a heavy bottomed saucepan until flat, cut into 2 even sized pieces. Heat oil in pan for a couple minutes until boiling hot.

Dip the individual chicken breast pieces in the egg mix, then flour mix, then repeat. Carefully lower the chicken into the hot oil and fry until golden.

Whilst frying, chop the fresh lettuce, onion and add to the toasted buns with a dollop of mayonnaise.

Drain fried chicken on kitchen towel and pop between the buns.

Tip: If you like spice or a bit of heat, play around with the spices... but always keep the garlic salt & onion granules.
