Chicken Kiev - Sundried Tomato & Mozzarella recipe

1. Using a sharp knife, slice a small hole in the side of the chicken breast and carefully create the hollow for your ingredients. The opening needs to be about 1 inch wide or thereabouts.

2. Spoon half of the Dolmio Sun Dried Tomato Sauce into the cavity followed by half of the chopped mozzarella.

3. Carefully dredge the whole chicken breast in plain flour, covering as much of the outside as possible.

4. Dip the flour covered chicken in the lightly beaten egg, turning to ensure even coverage.

5. Finally, roll the Chicken Breast in the bread crumbs until thoroughly covered and place on a lightly oiled baking tray.

6. Repeat steps for Chicken Breast #2

7. Spray both breaded Chicken Breasts with oil, and cook in a preheated oven at around 200 degrees celsius for 30 - 40 minutes, or until breadcrumbs have toasted on the outside.
