Chicken leftover Fajita open sandwich

I am a Tesco Colleague and part of the Tesco Orchard program. I tried the Finest Whole Chicken for less, and it was a great roast dinner, but people seem to forget that leftovers can make a great meal too.

Slice or chop the leftover chicken, (I used the leftovers from my Tesco Finest Whole Chicken).

Fry the chicken, drained corn, drained mushroom, and onions in a little oil, then when the onions are soft, add the fajita mix,chopped tomatoes, King Goblin and tomato purée and stir for a few minutes

Slice the bloomer, grill on one side, then turn over and top with the mixture, there may be some left over for seconds!

Grate cheese over the top and place under a grill until bubbling, then serve.

Great for using leftovers, could add sliced peppers, fresh veg instead of tinned. Alcohol is optional and red wine would work too.

  • 1 medium onion
  • 1 tin of sweetcorn
  • 1 tin of sliced mushrooms
  • 1 tin of chopped tomatoes
  • splash Hobgoblin King Goblin
  • approx. 1 tbsp tomato purée
  • 4 slices fresh Bloomer loaf
  • a little vegetable oil
  • 1 packet fajita mix
