In this economic climate everyone always wants to use up leftovers and I think this is an excellent way to do so. Full of goodness and easy to make I hope you will enjoy it
Cut up leftover chickens , vegetables and place in frying pan with a little oil. Cook for about 10 mins until warmed through- add a little water to prevent sticking. Add 2 tablespoons milk 2 tablespoons of sherry, salt and pepper and a little dried sage or herbs and gravy from roast. ( a stock cube in a cup of boiling water will also suffice )Mix well together and let it bubble gently for about 10 mins. Pre- heat oven to 180 CTransfer to a shallow ovenproof dish and place sliced roasted potatoes on top, place in oven for 20 mins until nicely brown. Serve and enjoy!
This dish is made from a roast chicken but any other roast will do.Remember to cook extra vegetables with your roast especially potatoes.
This is quick, cheap and very nutritious and most of all tasty! All the family will enjoy it and you can add your own twist to it- maybe serve with french bread spread with wholegrain mustard and grated cheese cooked in the oven for 5 mins. Instead of potatoes try a pastry crust..... the options are endless!
