Preheat the oven to 200°C.

Place the chopped chicken breast in a food processor and pulse until minced. Spoon into a bowl and combine with the breadcrumbs, eggs, chopped basil and seasoning until well incorporated. Using lightly oiled hands, roll into balls between your palms.

Arrange in a ceramic baking dish. Pour in the olive oil and balsamic vinegar. Sprinkle over a little seasoning and sit the bunch of basil leaves on top.

Bake for 25-30 minutes until the balls are cooked through with no pink showing and golden brown in colour. Remove and allow to sit for a few minutes before serving.
