This chicken, pea and ham risotto makes a hearty meal for children, and you can have it on the table in just half an hour. Great for getting older kids involved in cooking!
- Heat the olive oil in a medium sized saucepan, add the onion, celery and carrot and fry over a medium heat until softened but not coloured. Add the garlic and fry for another minute.
- Stir in the risotto rice and stir for 1 minute over the heat. Then gradually add the hot stock a little at a time until it has all been absorbed and the rice is almost tender - maybe a team effort here, one can stir, and the other can pour.
- Stir in the Goodness roast chicken bites, Goodness sliced ham and peas and warm through for 1-2 minutes. Scatter with grated parmesan to serve.
