Chicken, pea and ham risotto recipe

Pea and ham risotto (h)

This chicken, pea and ham risotto makes a hearty meal for children, and you can have it on the table in just half an hour. Great for getting older kids involved in cooking!

  1. Heat the olive oil in a medium sized saucepan, add the onion, celery and carrot and fry over a medium heat until softened but not coloured. Add the garlic and fry for another minute.
  2. Stir in the risotto rice and stir for 1 minute over the heat. Then gradually add the hot stock a little at a time until it has all been absorbed and the rice is almost tender - maybe a team effort here, one can stir, and the other can pour.
  3. Stir in the Goodness roast chicken bites, Goodness sliced ham and peas and warm through for 1-2 minutes. Scatter with grated parmesan to serve.

  • 1 small onion, finely chopped
  • 1 stick celery, finely chopped
  • 1 carrot, peeled, finely chopped or grated
  • 2 garlic cloves, finely chopped
  • 100g (3 1/2oz) risotto rice or basmati
  • 500ml (17fl oz) fresh chicken stock, hot or low salt chicken stock
  • 70g (2 1/2oz) Goodness roast chicken bites
  • 70g (2 1/2oz) Goodness sliced ham, cut into small pieces
  • 100g frozen peas
  • grated Parmesan, to serve
