In a large frying pan, heat the olive oil and quickly fry the chicken over a high heat for 5-6 mins until it is cooked through. Allow the chicken to cool then tear it into bite-sized pieces. Squeeze the juice of half a lemon over the chicken pieces.
In a large serving dish, place the garlic, chilli, ginger, tomatoes lettuce and chicken. Pour over the fish sauce and mix well.
Squeeze over the remaining lemon halves, season with pepper and serve.
Tip: If you like more spice, add more ginger, lemon juice and whichever variety of chilli you prefer.
