Place the onion in the food processor to finely chop. Remove and set aside. Mix the Turkey with dried mixed herbs, onion, breadcrumbs, salt and freshly ground black pepper. With wet hands divide the mixture into 4. Coat into beaten egg followed by cornmeal meal. Coat again in the egg and finally into the breadcrumbs mixture. Heat a large frying pan with rapeseed oil. Pre-heat the oven to 200 C/ 400 F/ Gas mark 6.
Fry the burgers on both sides until golden, then transfer to a plate lined with kitchen paper. Place in the oven for 10 minutes to complete cooking. Toast the burger buns in the oven for 5 minutes. Spread some hummus on to each burger bun. Top with some sliced pepper, gherkins and finally the cooked schnitzel burger.
