Chicken stir-fry with onion and peppers recipe

Heat the oil in a wok or large pan and stir-fry the onion and peppers for 6-8 minutes.

Add the chicken and continue to stir-fry for another 6-8 minutes before adding the stock, continue to stir-fry until the meat is cooked through.

Stir in the cooked rice and serve.

  • 1 large onions, peeled and chopped
  • 1 red pepper, deseeded and chopped
  • 1 yellow pepper, deseeded and chopped
  • 500g chicken, beef or pork, cubes
  • 1 stock cube diluted in 100ml water
  • 200g long grain rice, cooked
