Chicken Tikka, Pilaf and Riata with LOGO

Blend the tikka masala paste with the Alpro Simply Plain, lime juice and chopped coriander. Pour the mixture over the chicken and leave to marinate in a non-metallic dish for about an hour. Thread the chicken onto skewers and grill or barbecue until cooked through - if using wooden skewers soak in cold water first for 30 minutes

To make the pilaf, add the rice, turmeric, cinnamon and a litre of water. Cover and boil for 10 minutes over a low heat, until rice is cooked through and the water has been absorbed.

To make the raita, mix the cucumber, mint, lemon juice, Alpro Simply Plain and Alpro Soya Single into smooth paste and season with salt and pepper.

  • For the chicken:

  • 165g ready-made tikka masala paste
  • 150g Alpro Simply Plain alternative to yogurt
  • Juice of 1 lime
  • Small handful of coriander, finely chopped
  • 4 skinned chicken breasts, chopped into small evenly sized chunks
  • For the pilaf:

  • 350g basmati rice
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • A pinch of salt
  • A pinch of black pepper
  • For the raita:

  • 1/4 cucumber, grated and excess water squeezed out
  • Small handful of mint (finely chopped)
  • Juice of 1 lemon
  • For the dip:

  • 200g Alpro Simply Plain alternative to yogurt
  • 3 tbsps Alpro Soya Single alternative to cream
  • A pinch of salt
  • Pinch of ground black pepper
