Chicken with chilli and pesto recipe

Pre-heat oven to Gas 7, 220°C, fan 200°C.


Wash the vegetables and cut into evenly-sized slices (including the chilli) and place in a non-stick roasting tin. Lay chicken breasts in the roasting tin on top of the vegetables.


Pour the pesto over all the chicken and veg. If you have a really spicy tooth you can also add some crushed chillies. Cover the whole tin with foil.


Pop in the oven on the middle shelf for 30 minutes.


Check chicken is cooked through and serve with the side of your choice (salad for non carb fans!).
