Pre-heat the oven to Gas 6, 200°C, fan 180°C.
Season the chicken breast slices with salt and pepper. Heat 1tsp olive oil in a frying pan and fry the chicken breast slices quickly on both sides until they are golden (1 minute each side).
In a small bowl, mix the yogurt with 4tsp of mustard, salt, pepper and 2tsp of lemon juice. Place a layer of chicken breast into a buttered Pyrex dish; pour over a layer of the yogurt mixture.
Alternate further layers of chicken breast and yogurt mixture until the chicken is used up, ending with a layer of yogurt mixture.
Sprinkle the grated cheese over the top, place the dish into the oven and cook for approximately 15 minutes.
Serve with boiled vegetables and a good piece of bread.
