I discovered Gyros when in Corfu and loved them so much I adapted the recipe to a healthier version, dropped the fries and use light mayo and hummus... enjoy
Slice the chicken breast thinly and cook in hot pan/wok (this is the only bit of cooking fast and simple)
Wash, slice and dice the salad ingredients
Give the wraps a warm in microwave for 1 min
Spread red pepper hummus on wraps
Place salad onto wraps
Add Chicken whilst still warm
Roll the wrap and its good to eat
When rolling the wrap, roll half way and then tuck up the bottom, it stops the food falling out the bottom. Then continue rolling, blob some hummus to help the wrap stick and holds it closed.
