Impress your family!
Crush biscuits, melt butter, add sugar, then blend in biscuit crumbs, turn mixture into 7inch flan dish. Bake in slow oven for 8 minutes, remove and allow to cool.
Mix together cream, condensed milk and finely grated lemon rind, slowly beat in juice from the lemons. Pour mixture into cooled flan case and chill for several hours. Serve when ready.
Beat the double cream slightly before adding rest of ingredients, this will give a lighter filling.
