I needed something quick to fill me up and it was just throwing together some bits and pieces, as the sour cream needed to be used up, as did the salmon.
Put the pasta on to cook as per packet instructions.
Cut up all the ingredients, pepper in chunks, onions in rings and salmon in chunks.
Heat a small frying pan on medium heat, add a drizzle of oil, wait until hot.
Add the spring onions, garlic and chilli flakes, stir so that all the onions are covered with spices, cook for 1 minute.
Add the peppers and paprika, stir fry for another 3 minutes.
Add the salmon and cook for a further 5 minutes until when it flakes away there are no raw bits.
Drain the pasta and place in a bowl, add the salmon and pepper mixture and stir.
Add the sour cream and stir again, it’s ready!
