Preheat the oven to 180°C/160°C/gas 4. Cream together the Lurpak Baking and sugars using an electric mixer. Add the flour, oats, chocolate chips and chilli flakes and mix well until evenly combined. Roll the cookie dough into a log shape on a lightly floured surface until it is approximately 24cm long.
Slice the log into 14 cookies. Line two baking trays with nonstick baking paper. Place the cookies onto the trays, allowing space for the cookies to spread slightly. Bake in a preheated oven for 15-20 minutes, until just golden brown around the edges but not dried out.
This is an easy recipe to adapt, so why not try swapping the dark chocolate for white chocolate and adding a handful of macadamia nuts for a nutty burst of flavour.
