Preheat oven to 200°C/400°F/Gas 6.
Prick holes into the duck skin, and rub in sea salt. Place in the oven for 1 hour and 30 minutes. Remove from oven and leave to rest.
Meanwhile scatter the spinach leaves onto a serving plate and grate the radish on top.
Return to the duck, cut it into pieces and remove any bones. Put the cut up pieces of duck back in the baking tray and add the sweet chilli. Cook in the oven for up to 1 hour, until the duck turns crispy
Scatter the meat on top of the spinach salad and serve.
