Prepare the vegetables and cut the chicken into evenly-sized strips.
Heat the vegetable oil over a high heat in a wok or large frying pan. Add the chilli, garlic and ginger to the pan and fry for 30 seconds. Add the chicken to the pan and fry until the chicken is cooked through.
Once the chicken is cooked, add all the vegetables to the pan and fry for a couple of minutes. The vegetables should retain their crunch.
Finally, stir in the soy sauce and serve with boiled rice or egg noodles.
