Preheat oven to 180*C / 350*F / Gas Mark 4. Put deep muffin cases in a muffin tray or if wanting a cake, line a shallow cake tin with grease proof paper and put aside.

Mash the Bananas using a sturdy fork.

Place the Butter and Sugar into a mixing bowl and cream together, add the Cocoa Powder and stir in. Add the Eggs and stir well.

Pour the mashed Banana into the bowl and mix together.

Gradually whisk the Flour into the mixture and using a wooden spoon, stir in the Chocolate Chips.

Pour the mixture into the Muffin Cases and bake for 20-25 minutes (or cake tin and bake for 40-50 minutes)

To check if cooked all the way through, stick a knife through the centre of the cake, if it comes out with just melted chocolate streaks it’s cooked. Remove from the oven and allow to cool by placing onto a cooling rack.

The deeper the muffin cases the more they'll rise, if using a fan assisted oven, place muffins on the middle or bottom shelf or they'll end up blow topped rather than looking like tradition raised muffins.

  • 75g Milk chocolate chips
