Chocolate coated shortbread

These biscuits are really nice to make and give to friend as gifts.

Cream butter and sugar together with an elelctric beater till light and fluffy.

Sift lour and cornflour together. Mix the flour into the butter cream to form a dough. Turn the dough out on a flour oard.

Roll the dough out thinly about 1 cm. thickness. Use a biscuit cutter and cut into biscuits. Arrange the biscuits on baking trays. Bake in preheated oven 180C/ Gas 4 for 10-12 minutes.

Remove from the oven and leave to cool. Melt the chocolate in a bowl over a pan of warm water. Spread the chocolate overeach biscuit thickly. Leave to cool.
