I researched a number of recipes for cake mixes and icing types and brought these chocolate flavours together to make my son's first birthday cake.
Preheat oven to 180oC and grease your tin. I used a number one mould but two 18cm sandwich tins would work too
Sieve dry ingredients into a mixing bowl then add the sugar and mix well.
Add the syrup, eggs, oil and milk and beat until smooth
Spoon mixture into your tin(s) and bake for 30 minutes or until a skewer/knife comes out clean. Remove cake from tin and remove and cool thoroughly.
If using one tin use a serrated knife to cut cake into two layers
Make the buttercream by beating butter until soft and then continue to beat it while gradually sifting in icing sugar and cocoa powder. Add enough milk to achieve fluffy mixture. Spread thinly between layers and around outside of the cake.
To make marshmallow fondant melt marshmallows and water in a glass bowl in 30 sec bursts, stirring in between. Once melted add icing sugar gradually until mixture can be kneaded and rolled out. To achieve chocolate flavour substitute some of the water with melted chocolate and some of the icing sugar with cocoa powder. Alternatively gel food colouring can be added to the white fondant when kneading.
The marshmallow fondant will adhere to the butter cream covering and further decoration can be added by using cutters and fixing with a dab of water between icing.
