I love the combination of flavours here and the surprise people have when they realise it it not just a chocolate cake but with an orange surprise
Make the Sponge: Whisk the eggs and sugar until very thick and the beaters leave trail
Melt the butter and add to the whisked mixture along with the flour and fold in
Fold in the zest of 1 orange
Spoon the mixture into 2 greased and lined 7" cake tins. Bake at 180 for 15-20 minutes
Put the cream in a saucepan and bring to the boil.
Stir in the chocolate until it is melted and combined and leave to cool
In a separate small saucepan place the zest of the second orange, the butter, the brown sugar and 2 tablespoons of orange juice
Heat gently until the butter is melted and the sugar dissolved ad boil for 1 min
Pour over the icing sugar and stir to combine well
Assemble the cake with the orange truffle mixture in the middle and the chocolate mixture poured over the top
Use and electric beater for the eggs and sugar
