This is a recipe I wrote a couple of years back to cook with my mates (we even made a video of it for YouTube). It‘s been a firm favourite ever since. Because it freezes really well too I also have a slab of it saved... just for emergencies!
Weigh the butter, sugar and chocolate into a microwaveable bowl and nuke for 2 minutes or so, stirring occasionally until the mixture has melted.
Preheat the oven to 175°C.
Line a 20x20cm baking tin with greaseproof paper, or use a silicon mould.
Crack in the eggs and vanilla essence and beat until smooth and glossy.
Sieve the cocoa and flour into the melted chocolate mix and beat well.
Pour into the mould and shake the tin to level out the mix.
Scatter the peanut M&M‘s over the mix and poke so they sink in a bit.
Bake for 30 mins then remove from the oven and allow to cool fully in the tin.
Cut into chunks to serve cold, or warm with vanilla ice cream.
