I always make these cup cakes and give to friends for Easter. Children love them.
Put sugar and butter in a mixing bowl. Using an elelctric mixer. mix the sugar and butter till light and fluffy. Beat in eggs on at a time.
Add in chopped cherries. Fold in the flour with a metal spoon.
Line a mufin tin with 8 cup cake cases. Spoon the cake mixture into the cake cases. Bake the cup cakes in the middle of the oven Gas 5/ 190C for 25 minutes till golden brown.
Remove from the oven and leave to cool. Mix the icing sugar and butter together. Add in some food colouring if you wish. Spread half a teaspoonful o icing on top of the cool cup cake and decorate with a mini egg.
