Experiments and using up ingredients was how this was created and its a firm fav now
Put the olive oil in a pan and fry off the chopped onion and chopped chorizo. Fry until onions are soft.
Add tinned tomatos, balsamic, garlic, salt and pepper. Turn down the heat and cook slowly for about 30 mins.
Meanwhile cook the pasta in a little salt for about 10 mins.
Just before serving add the creme fraiche and stir in. Cook for about 5 more mins then serve.
Top with a little grated parmesan.
