Reminds me of a potato based meal we had in France with our good friends.
Peel and slice potatoes (1/4 inch thick). place in 800ml water with stock cube. Bring to the boil and simmer for 6 minutes. Drain but keep the stock.
Gently fry the chopped leeks and onions for about 10 minutes in the oil and butter. Add the chopped chorizo and continue to fry gently for 5 minutes.
In an oven proof dish layer the sliced potatoes, sprinkle with the fried mixture, layer more potatoes and sprinkle with fried mixture, continue ending with a layer of mainly potatoes.
Pour about half of the stock into the frying pan to lift the flavours from the pan. Add some salt and pepper then pour over the layers leaving about 1inch of mixture not covered in stock.
Put the halved cherry tomatoes and blobs of the cheeses randomly over the potatoes. Bake at 190 for 45 minutes.
Serve with French beans.
Cheap, tasty mid week filling meal for hungry teenagers.
Can be frozen.
