Cook the chorizo in a nonstick frying pan for 10 minutes or until crisp, cooked through and the juices released. Drain. Mix the mayo with smoked paprika, then spread on both sides of the rolls. Stuff with rocket, chorizo and peppers and add a squeeze of lemon before eating.
