Chunky Cabbage & Carrot Soup recipe

Bring the stock to the boil in a pan and add the carrot and cabbage. Cook for 8-10 minutes, or until the vegetables are tender.

Transfer the soup to a food processor, add the olive oil and cream and season with salt and freshly ground black pepper. Blend until most of the soup is smooth, but still retains some chunky bits.

Pour into a bowl and serve immediately.
