Prepare all the ingredients and heat 2tbsp oil in large pan.
Brown the pork for 4-5 minutes, then add carrots & onion, fry for 2 minutes.
Add garlic and fry for a further minute before adding all other ingrediants apart from the corn starch and flour. Cover and cook for 1-1½ hours on the lowest hob setting until meat is fairly tender and potatoes almost cooked.Add corn starch and cook for a further 30 minutes until sauce thickens, season to taste and serve.
Can also add leeks, turnips, sweet potato etc. For a more economical dish and lower in fat, halve the meat and use 1 can of mixed beans and one can of chopped tomatoes. You can also use frozen vegetables but they will cook in less time and be a little mushier.
For those who like a spice hit, you can add paprika and fresh chilli to taste. Freezes well, just place in freezer proof containers, defrost for a minimum of 3 hours (preferably overnight) before attemping to microwave.
