Just a quick healthy meal that the whole family enjoys even my children.
Cut and peel onion into medium sized pieces, cut and de seed both peppers and cut into similar sized pieces as the onion. Cut asparagus stems into 2-3 pieces.
Add garlic, salt and pepper and olive oil, mix until thoroughly coated.
Put into oven 200`c to roast for about 35-40 mins.
Make rice as instructed on packet.
Put flour, salt and pepper into a large freezer bag and coat fish with the mixture.
Add butter to hot frying pan and fry fish until golden and a nice crust has appeared turning once ( this only takes about 3 mins each side)
Once rice has cooked add to roasted veg and mix together.
Serve at once, enjoy :-)
