I love this cake , it's such a great and easy recipe. I usually make this with the kids( obviously I heat the treacle). They love rubbing the butter into the flour and their little fingers work better than mine! They also love the idea of the coca-cola in it. Its an unsual combination as you wouldnt think of putting ginger and a fizzy drink together but the coca-cola actually brings out the flavour of the ginger really well.This is my all time favourite recipe!
Preheat the oven to gas mark 6, 200 degrees C, fan 180 degrees. Grease & flour a 900g loaf tin.
Sift the flour, bicarbornate of soda and all the spices into a bowl. Rub in the butter so that it looks like breadcrumbs.
Warm the treacle and syrup in a pan until combined, then leave aside to cool.
In another pan, heat the sugar with the milk until it dissolves. Stir in the stem ginger and Coke.
Pour mixture into the flour/spice mix, along with the treacle mixture and beaten eggs. Stir well to combine together.
Tip into the baking tin and bake for 45 mins or until a skewer pushed in comes out clean
1)Use butter paper to grease the tin.
2) Use the tips of your thumb,index and middle finger to rub the mix.
3)Dont use a spoon to mix, just swirl.
4)Dont let the milk boil.
5)Start by folding first then mix near the end.
6)Serve with cream or Greek yoghurt and little shavings of lemon zest.
