I had this is Canada years before the invention of the internet. I loved it so much but could never recreate the taste. I then saw Nigella had a recipe in one of her books. I've varied the ingredients over time to suit my own tastes. Now it a firm familly favorite.

Put the gammon in a pan add a coursely chopped onion and pour over the coke. Put the gammon in the pan fat side down if it will fit.

Heat the pan until boiling then reduce to a simmer and put the lid on.

Cook the joint on the hob for 2½ hours.

Preheat the oven to 240c

When the ham is cooked allow it to rest for 10 minutes. Once cool, remove the skin, just leaving a little fat to protect the meat.

Score the fat with a sharp knife and insert the cloves into the markings.

Spread the treacle over the studded skin.

Encrust the mustard and sugar onto the treacled fat.

Cook in a foil-lined roasting tin for approximately 10 minutes.
