Pop all of the ingredients in the tesco Thai selection pack (galangalal, garlic. Shallot, lemongrass, and chillis) into a blender with the lime juice and blend to a smooth paste
Heat a pan and dry fry the fish until just cooked and flaking about 5 minutes then turn off
Heat another wok/pan with the vegetable oil and fry the paste for 5 minutes it until its golden brown and separates from oil
Add the tin of coconut milk and all the salt and apices and simmer for 5 minutes
Add the peppers and cook another 10minutes until tender then add the fish chunks
Simmer for 5minutes then serve with white rice and peanut sauce
