A few friends were coming for a girly lunch and we wanted something different but filling so remembering the gorgeous sustainable fresh fish I tried courtesy of the orchard at tesco programme I went an

Pop all of the ingredients in the tesco Thai selection pack (galangalal, garlic. Shallot, lemongrass, and chillis) into a blender with the lime juice and blend to a smooth paste

Heat a pan and dry fry the fish until just cooked and flaking about 5 minutes then turn off

Heat another wok/pan with the vegetable oil and fry the paste for 5 minutes it until its golden brown and separates from oil

Add the tin of coconut milk and all the salt and apices and simmer for 5 minutes

Add the peppers and cook another 10minutes until tender then add the fish chunks

Simmer for 5minutes then serve with white rice and peanut sauce

  • 1 Packet tescos fresh thai ingredient selection
  • 2 tablespoons Peanut satay sauce to serve (optional)
  • 1 teaspoon Salt
  • 1/2 teaspoon Ground white pepper
  • Pinch Freshly ground black pepper
  • 1 tablespoon Vegatable or rapeseed oil
  • 1 teaspoon Chinese 5 spice
  • 1 Juice of a lime
  • 1 Red and yellow pepper finely sliced
