I am gluten intolerant and I have to be really careful with the foods I eat and I‘ve recently had to change my diet to dairy free, so I wanted to find a dairy free refreshing snack that I can have (esp. in this heat). I really like smoothies but because of the recent weather and everyone is eating ice cream/lollies I decided to make my own. and the recipe is really easy and healthy :)
(I use a cup I got with my food mixer)
Cut off the tops of the strawberries and cut in half then add to the cup
Fill the rest of the cup with the coconut milk and add to food mixer.
Mix until you are happy the two ingredients are blended together
add mixture to your ice lolly moulds and put in the freezer for 4 hours
