I thought of this recipe as I am a member of the Orchard at Tesco and I am currently participating in the Responsibly Sourced and Expertly Prepared Fresh Fish from Tesco programme.
Check the Cod for any remaining bones and carefully remove.
Skin the cod by gently pulling away from the flesh, leaving the fillet intact.
Slice the fillets into 4/5 inch strips and lightly coat in the flour removing any excess.
Dip the strips of floured Cod in the egg and then in the Panko breadcrumbs and evenly coat.
Heat the vegetable oil in a frying pan and when hot enough fry the goujons in batches of 5 or 6 for 3 - 5 minutes until golden brown and place on kitchen paper to absorb any excess oil
To ensure the vegetable oil is upto to temperature place a few Panko breadcrumbs in the pan and when they rise to the top it's ready to go.
