Moon cakes are a kind of traditional Chinese desserts for the Mid Autumn Festival. They are usually filled with pork, but here I tried fish fillings, and they are liked by my family.

For the dough: In a large bowl, mix the plain flour, honey and vegetable oil until smooth.

For the fillings: Cut cod fillets into small pieces, mix with mashed potato, salt and black pepper.

Cut the dough into 20 even portions. Press each dough portion into a 4-inch-wide circle, with the edge thinner and the centre thicker.

Put the fillings into each dough and press the edge together. Then use a moon cake mold to shape.

Bake at 200°C for 20 minutes. Set aside to cool completely.

(1) To get a better result, in the first step, set the dough aside for 2-3 hours and cover it with a wet towel. (2) Before baking, brush the surfaces of the cakes with a little egg yolk, so that the cakes will get a golden-brown look.
