Colourful vegetable couscous recipe

Ask an adult to help you make up the stock by dissolving the stock powder in boiling water, before pouring it over the couscous in a large bowl.

Fluff the couscous with a fork and leave it to stand for 5 minutes.

Wash, dry and chop the tomatoes and cucumber into small chunks with the help of an adult.

Wash and dry the pepper, apricots and parsley, before cutting them into small pieces, again with the help of an adult.

Wash the spring onions and snip them into the bowl using the scissors.

Add all the vegetables and fruit to the couscous. Also try swapping tomatoes, cucumber and pepper for their your favourite vegetables, such as celery, sweetcorn and mushrooms, or you could even switch the apricots for raisins.

Add the dressing, before stirring everything together.

Serve with crispy salad. You could also try adding some chickpeas, chopped cooked chicken, ham, tuna or chunks of feta cheese for extra flavour.
