I work in an office that deals with children swear so we always like to have a bit of fun. I've become well known for my baking feats so thought i would try something a little more challenging. They went down a storm with everyone taking pictures & wanting more!! They are perfect for children's parties (or big kids parties!!)
Turn on oven to 190oC (Fan over 160oC). Put all ingredients into a bowl & mix with an electric whisk or food mixer. Mix on slow speed to start with & then a medium to fast speed for about 2 minutes until fully incorporated and looking fluffy.
Put into 10-12 muffin cases & bake for 18-22 minutes
Once cooked, pull out on to wire cooling racks and wait until completely cool.
In the mean time, prepare the decorations. Stick the milk chocolate chips on to the large white chocolate buttons. Do this by melting a small amount of chocolate so you can 'Weld' them together. The idea is that he has 'Googily' eyes so you can place them on randomly as in the picture.
Mix a small amount of Blue food colouring to the desicated coconut & mix up to coat.
Make up enough butter icing coloured blue to lightly coat the cupcake.
Roll the iced cupcake in the desicated coconut to coat the top of the cake to look like fur.
Cut two small slits for eyes & 1 larger slit for the cookie & put in the eyes & half a chocolate chip cookie for his mouth
Then you have a completed hungry cookie monster!!
To coat the coconut with food colouring I put it into a zip lock bag so i can push the colouring into the coconut easier without making any mess!
