Ingredients

  • 125g soft light brown sugar
  • 100g golden caster sugar
  • 150g butter, melted and left to cool slightly
  • 2 tsp vanilla essence
  • 1 large egg, plus 1 extra egg yolk
  • 300g plain flour
  • 1½ tsp bicarbonate of soda
  • 100g pack milk chocolate chips
  • 1L Carte D’Or vanilla ice cream
  • 25g pack edible eyes

Method

  1. Preheat the oven to gas 3, 170⁰C, fan 150⁰C and line 2 baking trays with baking paper. Put the brown and caster sugars in a bowl, pour in the butter and beat with a whisk or hand mixer until light and fluffy.
  2. Add the vanilla, egg and egg yolk, and beat until light and creamy.
  3. Slowly add the flour and bicarbonate of soda until just combined, then fold in the chocolate chips.
  4. Using an ice-cream scoop, place each scoop onto the baking tray, leaving a gap of several centimetres between them to allow for spreading. If you can’t fit the dough onto the 2 trays then cook in batches, chilling any uncooked dough in the fridge while waiting.
  5. Bake in the oven for 15-18 mins until the edges are browning slightly. Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
  6. Before serving, remove the ice cream from the freezer to soften for five minutes. Sandwich 1 scoop of Carte D’Or vanilla ice cream between two cookies, gently pressing together so that the ice cream spreads out between the cookies.
  7. Decorate the ice cream with lots of edible eyes. Repeat until all the cookies have been used up.­

Tip: Make sure your Carte d’Or Ice Cream is soft enough to scoop easily when you start assembling the sandwiches.
